Avocado Spinach Soup w/ Pistachios

We have the most beautiful bloomsdale spinach from County Line Harvest today. One of my favorite soups to make are avocado soups. They’re quick and easy. A healthy and fulfilling lunch.

Makes 3 Servings

Ingredients:

2 Avocados

1/2 cup olive oil

1 bunch of spinach

1 bunch of cilantro

1/2 cup of pistachios

2 cups water

2 teaspoons paprika

3/4 teaspoon salt

1/2 cup of freshly squeezed meyer lemons or limes

Blend all ingredients in a blender. Add a little more salt or lemon if you like. You can also add more water if you want it to be less thick. I like to leave the vitamix running until the avocado soup is slightly warm.
