A $15 Easy Dinner for 2 or 3!
This meal was so satisfying, so easy to make and tasty! You can really have fun wth this idea, and come up with your own spice mix for the tomato sauce, or add more veggies to the tacos. I would normally add some kale to this or another green I have on hand.
Makes about 12 Tacos
Cilantro (from our farm bundle)
Tortillas (make fresh or buy them, but fresh is so much better, and makes this an $11 Dinner for two.)
Garbanzo Beans (about 24 ounces)
Grass Fed Greek Yogurt or Coconut Yogurt
Salt and Pepper
Simmer the already cooked garbanzo beans with about half a bottle of tomato sauce. Just make sure to cover the beans but don't make it too saucy. Use the spices you want, and let it simmer while you make the tortillas.
Spread yogurt on the tortillas, add a spoonful of chickpeas on top, and some diced cilantro. That's it! Super simple and so satisfying.
