This is a wonderful kohlrabi soup that was made by one of our team members, Chanae Owens.
She made a broth by simmering mushrooms and the green tops of her leeks. You don't need to add too much in your broth, but if you have extra things like beets greens or cabbage leaves, carrots shavings, etc. You will benefit form using those too.
Discard the broth veggies. Once they've been simmering for about a half an hour or hour.
For the soup, she added miso, kohlrabi, garlic, chopped leeks, and cooked it in the broth. You can puree this if you wish. Throw some fresh herbs on top, like rosemary. Add some olive oil!
