Celery Salad w/ Sun Dried Tomato Dressing Recipe

We were pretty excited to taste the first crop of celery in the field. Really want to say it’s the best I’ve had. The desert soil really produces an impressive quality of juicy texture and flavor.

This dressing recipe is pretty creamy without using cream, and it combines well with celery.

Celery Salad w/ Sun Dried Tomato Dressing

A really nice combination, celery with sun dried tomatoes as a base for a dressing.

Ingredients

  • 1 Head of Celery
  • 1 Bulb of Fennel (optional)
  • Citrus Slices
  • About 9 pieces of oil packed sun dried tomatoes
  • Lemon
  • Cara Cara Orange
  • Olive Oil
  • Chili Flakes
  • Pistachios or Walnuts

Instructions

  1. Slice the celery and fennel to the thickness that you want it to be. I tend to shave things thin.
  2. Squeeze the juice of 1-2 lemons, and 1 cara cara orange. Add the juice, sun dried tomatoes, and some olive oil to a blender. Sprinkle a little salt if you want to. Blend the ingredients until smooth, then add some filtered water until you like the consistency.
  3. Toss the salad in a bowl with the dressing. Then top it off with some nuts, chili flakes and citrus slices.
