Chilled Chard & Basil Soup Recipe
What I love about this soup it that it’s a refreshing way to drink healthy greens. You might more often see spinach soups like this and those are great, but I actually really enjoy it with chard. Since it’s important to have a variety of vegetables in our diet, this is one way I like to do that. When it comes to blended soups I always add crunchy veggies to it. For one, we need the fiber, and it makes the soup much more interesting.

Chilled Chard & Basil Soup
Refreshing and an enjoyable way to drink healthy greens.
Ingredients
- 1 bunch chard
- 2 oz lemon juice
- 2 oz filtered water
- small handful of basil (about 1/4 bunch)
- 1/2 an avocado
- 1/2 a serpent cucumber
- 1/2 tsp celtic sea salt
- 1/2 tsp chili powder
Instructions
- Chop the cucumber into pieces. Put all ingredients in a high-speed blender, except the avocado and basil. Blend until very smooth.
- Then add half an avocado and the fresh basil leaves. Blend until smooth.
- Pour the soup in serving bowls and top with fresh ingredients. This is fun with snap peas, agretti, sliced cucumber, and even sautéed okra. You can also add dollops of coconut or nonfat greek yogurt on top.
