Cucumber Soup Recipe

Chilled Cucumber Avocado Soup
Smooth and flavorful.
Ingredients
- 1 Large Cucumber (or 1 pound smalls)
- 1 Avocado
- 1 Bell Pepper (when in season, otherwise flavor with pepper flakes)
- 1/2 bunch Cilantro
- 1 Lemon
- 1 Tbsp. Olive Oil
- Sea Salt
- Black Pepper
- Water
Instructions
- This soup was made with a big marketmore cucumber, about a pound in a half in size. You can use any other cucumber variety. Cut it in half and spoon out the seeds. Whether or not you shave the skin is up to you.
- Add a little water as you go to get the consistency you want. You won’t need to add much since the cucumber has plenty of juice. Add a little more lemon if needed.
- For many cucumber soups I pour it through a nut bag, for a very smooth consistency. Though, when I add avocado to it, I don’t do that.
- For toppings add basil pesto and cucumber slices.
