Chilled Cucumber Avocado Soup

Smooth and flavorful.

Ingredients

  • 1 Large Cucumber (or 1 pound smalls)
  • 1 Avocado
  • 1 Bell Pepper (when in season, otherwise flavor with pepper flakes)
  • 1/2 bunch Cilantro
  • 1 Lemon
  • 1 Tbsp. Olive Oil
  • Sea Salt
  • Black Pepper
  • Water

Instructions

  1. This soup was made with a big marketmore cucumber, about a pound in a half in size. You can use any other cucumber variety. Cut it in half and spoon out the seeds. Whether or not you shave the skin is up to you.
  2. Add a little water as you go to get the consistency you want. You won’t need to add much since the cucumber has plenty of juice. Add a little more lemon if needed.
  3. For many cucumber soups I pour it through a nut bag, for a very smooth consistency. Though, when I add avocado to it, I don’t do that.
  4. For toppings add basil pesto and cucumber slices.
