Fennel, Arugula Salad Recipe
This is a delicious and nutritious combination. If arugula isn’t in season, this salad is wonderful with just fennel, or another green. When we do have arugula this combination is excellent!

Fennel Arugula Salad
A very yummy salad with super nutritious arugula!
Ingredients
- 1 Fennel Bulb
- 1 Bunch Arugula or about ¼ lb baby arugula
Dressing
- ¼ Cup Olive Oil
- 3 Tbsp. Lemon Juice
- ½ Tsp. Dijon Mustard
- ¼ Tsp. Sea Salt
- ¼ Tsp. Black Pepper
- ¼ Tsp. Korean Chilie Flakes
Instructions
- Thinly shave a bulb of fennel. Wash and dry the arugula leaves. Put the fennel in a separate bowl.
- Whisk together all dressing ingredients.
- Pour half of the dressing over the fennel and massage it.
- Place the arugula leaves in a bowl, and pour the rest of the dressing on the leaves. Then place the fennel on top of the arugula, and pour any last bits of dressing on top.
- Top with flowers, or little slices of onions. Little lemon slices are great too if you like a burst of lemon.
Notes
If arugula isn't in season, substitute for another green!
