Green Beans Stew Recipe w/ Fresh Cherry Tomatoes

Green Beans & Things
Ingredients
- 1/2 Cup Onion
- 1/2 Lb Green beans
- 1-3 Carrots
- 2.5 Cups of Butter Beans
- Fresh Parsley
- Lacinato kale (or other variety of greens)
Sauce
- 2 Slices of Onions, Chopped
- 2 Tomatoes (or handful of cherry tomatoes)
- 2 Cups Water (or broth if you prefer)
- 4 Sun Dried Tomatoes
- 1/2 Cup Soaked Hazelnuts
- 1-2 Cloves Garlic
Instructions
- In a large pan, sauté chopped onions, with just a little healthy cooking oil of choice.
- Blend sauce ingredients in a high speed blender until smooth.
- Pour the sauce into the pan. Then add washed and chopped green beans. (I only chop the end piece). Slice carrots lengthwise and in half, and add carrots.
- Simmer on low for 20 minutes. Less if the green beans are skinnier.
- Then add already cooked butter beans.
- Simmer for 5 minutes, then add chopped parsley and kale. Simmer 5 more minutes.
- Top with fresh cherry tomatoes and other garnishes like crispy sage leaves!
Notes
You can use cashews if you want to, or another nut. I like the flavor and nutrients of hazelnuts. It can look a little grainy and not as creamy as cashews but I stand behind my hazelnuts!
