Heirloom Tomato Spinach Soup

This is a raw soup, and you can also enjoy it warm. Most people remove the skins of the tomato, that depends on your preference.


Ingredients:

1 lb. Heirloom Tomatoes

2 cups spinach, packed

Onions

1/4 bu. Cilantro

1/4 bu. Parsley

1 Tbs. Persimmon Vinegar

1 Tbs. Olive Oil

Salt and Pepper to taste

Choice Toppings

All that’s needed is to chop the ingredients and put them in a blender. Blend until smooth. I used 3 baby torpedo onions. Deepening on what type of onion you have whether it’s, green, pearl, spring, a big bulb, use just enough for you.
