Summer Squash Soup

This very simple soup is great for this season, and can also be used as a sauce to dip veggies in.

Summer Squash Soup

You can make this as a soup or a sauce to dip raw veggies in.

Ingredients

  • 1 lb Summer Squash
  • 1 Raw Avocado
  • 1/2 Bunch Cilantro
  • 1-2 Tbsp. Olive Oil
  • Onion, Garlic, Salt, and Pepper to Taste

Instructions

  1. Take any type of summer squash or zucchini, chop into even slices. Add about an inch of water to a small pot, and add the squash. Let it steam until it’s cooked through but not soggy.
  2. Once the squash is cooled down, put it in a blender and add avocado, olive oil, and cilantro. You can also add a little onion and/ or garlic. Sprinkle in some salt and pepper. Blend until smooth.
