Kohlrabi Pizza Recipe
Kohlrabi Pizza w/Spigarello Pesto

Thin slices of kohlrabi are wonderful on a pizza. This is a fun treat.
Ingredients
- pizza dough
- spigarello pesto
- 1 kohlrabi
- greens
- garnishes
- (cheese options) feta crumbles, parmesan, or vegan cheese
Instructions
- Make the spigarello pesto in advance.
- Preheat the oven to 500 degrees.
- You'll need a pizza dough if you make it yourself or have a good source for organic dough.
- Flour the surface, and cut the dough into two, then make them into balls. Put the pizza onto a pizza stone or baking dish. Stretch both dough balls into flat rounds.
- Spread spigarello pesto in a thin layer on top.
- Slice the kohlrabi with a mandoline on the second setting. Add the slices on top in one layer. Then add a gentle amount of feta cheese crumbles and parmesan flakes. Or use your favorite vegan cheese.
- Take a few leaves of greens. Any type of kale or collards. If you have a more delicate green like arugula or red frill, don't put it on top yet. Set it aside to put it on top later. For a kale variety, massage a tiny bit of oil on the leaves, and then add them to the pizza.
- Cook in the oven for 10-12 minutes.
- Top with sprinkles of black pepper, chili flakes, fresh herbs, and flowers.
