Cauliflower w/ Leek Sauce

A nice creamy sauce, using the whole leek, giving it a nice light green color that goes nicely with any type of cauliflower.

Ingredients

Roasted Cauliflower w/ Creamy Leek Sauce
  • 1 Cauliflower (or half a large one)
  • 1 Leek
  • 1 Cup of Sour Cream (or vegan version)
  • Olive Oil
  • Fresh Dill (or other herb)
  • Pepitas (freshly toasted)
  • salt and pepper to taste

Instructions

The Sauce
  1. Chop and sauté the whole leek in a little olive oil. Once it's cooked down and the green parts are soft, let it cool down.
  2. Add the leeks to the blender and puree with the sour cream. Add a little oil if needed.
Roasted Cauliflower
  1. Break the cauliflower into little florets, lightly coat with olive oil, sprinkle with salt and pepper, and bake in the oven at 400 degrees for about 25 minutes.
  2. Spread the sauce on a plate, and top it with cauliflower. Then add flavors like fresh dill, toasted pepitas and other seasonings.
