Shaved Red Cabbage & Fennel Salad Recipe

This salad is easily adjustable to your preferences. The main idea is to enjoy these two crunchy and delicious veggies together.

Ingredients

Main Ingredients
  • 1/2 head small Red Cabbage
  • 1 head medium size fennel
  • A little bit of cilantro or parsley
  • Olive Oil
  • Lemon or Lime
Dressing
  • 1 Lemon or Lime
  • 2 tablespoons sesame seed oil
  • 2 teaspoons mustard
  • 1/2 tsp honey
  • 2 cloves garlic
  • 1/2 tsp rice vinegar
  • 1/4 tsp hot sauce
  • About 1 teaspoon sesame seed
  • 1/2 teaspoon soy sauce
  • A little olive oil

Instructions

Veggies
  1. Slice the fennel with a mandoline. It's best to keep it at a low setting so that it's very thin. Place the fennel in a bowl, and squeeze 1/2 a lemon on top, sprinkle salt, add a little olive oil, and massage the fennel. Then set aside.
  2. Shave the red cabbage nice and thin. Use the same method with the fennel w/ some lemon, salt and olive oil.
  3. Plate the veggies side by side.
  4. Pour the dressing over the top of the cabbage.
  5. Add more lemon juice to the fennel, and other flavors like parsley, or cilantro, black pepper, shaved onions, etc.
  6. (Optional) sprinkle nutritional yeast on top.
Dressing
  1. Smash and dice the garlic, then sauté with a little olive oil. On the other side of the pan, (you'll have plenty of space even in a small pan) toast the sesame seeds without oil. Once the ingredients are light brown, pour them into a little bowl
  2. Mix 1/2 a lemon and the rest of the dressing ingredients.

Notes

Have fun with this, no need to stick to the exact measurements here. Work with what you have.
