Stuffed Lunchbox Peppers Recipe

Some might wonder, “why all the effort for these little peppers?” You could be just as happy slicing the peppers and adding them to the quinoa, which is great for a busy day. However, if you have a moment and want to have a little fun, these mini stuffed peppers are one of the most appetizing little lunch treats I’ve had. Coming from me, I’m not a huge fan of quinoa, but I appreciate the grain. These bites make quinoa really enjoyable. You could also use rice or millet in its place.

Stuffed Lunchbox Peppers Recipe

The perfect little healthy bite.

Ingredients

  • lunchbox peppers
  • cooked quinoa (up to 1 cup)
  • olives
  • parsley
  • red onion
  • (optional) feta cheese or vegan equivalent
  • black pepper

Instructions

  1. Preheat the oven to 350 degrees.
  2. Char the peppers on high heat in a pan. Move the peppers around with a tong so that the sides are charred.
  3. Add a little fresh parsley, sliced olives, feta crumbles, and diced onion. Mix with the quinoa.
  4. Once the peppers are charred, make a slit long ways on top without slicing the other side. Stuff each pepper with the quinoa mix with a little spoon. Get the mix into the sides so it's full. Sprinkle some black pepper on top.
  5. Place the peppers on a baking dish, slit side up. You can spray them with a little avocado oil if you want to or just bake them without oil.
  6. Bake for 10 minutes.
