Veggie Ceviche Recipe

Serpent cucumber is a special heirloom variety. It grows big and is very bendy. Though, it’s still crisp it’s not like a typical cucumber. It also doesn’t last as long, so be sure to enjoy it, don’t wait too long. Here’s a way I love to enjoy this wonderful cucumber.

You don't need a full recipe for this, rather here are the ingredients for a fun way to use serpent cucumber this time of season.

Ingredients

  • Serpent Cucumber
  • Avocado
  • Parsley
  • Cilantro
  • Lemon, Lime, or Both
  • Carrots
  • 1 little bit of Pickled Pepper on top
  • Salt and Sumac

Instructions

  1. Chop the cucumber, diced in pieces, then shave a carrot or two, and add the chopped herbs. Toss together.
  2. Squeeze plenty of lemon juice to cover the veggies.
  3. Add seasonings and toss.
  4. Add chopped avocado.
  5. Top with spicy pickled peppers, or add chili flakes.
