Citrusy Arugula Salad Recipe
I absolutely love my greens and arugula is at the top of the list. It’s packed with nutrients and when it’s harvested fresh without packaging it really has a lot of life and flavor in it. I feel amazing when I have an arugula salad!
This recipe uses a very simple dressing with the addition of citrus slices, pistachios, and the very lovely, french breakfast radish.

Arugula Salad w/ Citrus
Arugula is packed with nutrients, and pairs well with a light lemon dressing and slices of citrus.
Ingredients
The Salad
- 1 Bunch Arugula or about ¼ lb or more of baby arugula
- French Breakfast Radishes
- Pistachios
- Citrus Slices
- Sun Dried Tomatoes
- Fennel Bulb (or other seasonal vegetable if available)
- Option to add Slices of Peppers and Onions
The Dressing
- ¼ Cup Olive Oil
- 3 Tbsp. Lemon Juice
- A little lemon rind (optional)
- ½ Tsp. Dijon Mustard
- ¼ Tsp. Sea Salt
- ¼ Tsp. Black Pepper
- ¼ Tsp. Korean Chili Flakes (or if you have a spicier chili flake use the amount you can handle.)
Instructions
- Rinse and dry the arugula leaves. Then plate.
- Whisk or blend dressing ingredients and pour over the salad.
- Top with shaved radishes, slices of citrus, and all other ingredients.
