Kohlrabi Apple Salad Recipe w/ Red Cabbage, Carrots, and Lime
Fall has begun and these ingredients put together in a salad, really celebrate this time of season as we transition the season.

Kohlrabi Salad w/ Red Cabbage, Carrots, & Lime
There are so many ways to make this beginning of Fall salad. You can add your own flavors to the dressing. I kept this one very simple with very little oil. Really crunchy, healthy, delicious, and celebrates apples and kohlrabi perfectly.
Ingredients
- 1 Bunch of Kohlrabi
- 1 Apple
- 1/4 Head Red Cabbage
- 1-2 Carrots
- Fresh Peppers of Choice
- 4 Limes
- Parsley or Cilantro
- 1 Tsp. Sesame Tahini
- Sesame Seeds
- Sea Salt
- Black Pepper
- Garlic Powder
Instructions
- Slice the skin off the the kohlrabi bulbs. My easy way of slicing them into matchsticks is to slice the bulb in circles on a mandoline on the second setting. Then I take a knife and slice thin matchsticks. You might have another way you like to do it, but this is my simple, safe method that is cleaner rather than to shred it.
- Slice the carrots into matchsticks. Then on the thinnest setting on a mandoline shred the cabbage.
- Place the vegetables in a bowl. Then add the littlest amount of olive oil and two little pinches of salt. Massage it with your hands. You can do without this step if you don't want to use oils, but a very light amount works to break it down when you massage it.
- Juice 4 limes with a lemon squeezer. Pour it into a blender. Chop a small handful of parsley. About 1/4 cup or a little more. Then add the tahini and parsley to the blender with some black pepper, and garlic powder. Add more salt if you like. I kept this pretty low in salt, just enough. Blend the ingredients so that the parsley is chopped little, but not fully smooth blended.
- Freshly toast some sesame seeds in a pan (no oil) until they're golden brown. Careful, they go from perfect to burnt very quickly.
- Plate the veggies, and pour the lime dressing over the top. Add slices of apples, peppers, shallots, sesame seeds, and more parsley.
