English Pea Toast

English Pea Toast

This fun and delicious toast is high in protein and a delicious way to enjoy fresh english peas.

Ingredients

  • White Bean Hummus
  • Basil or Arugula Pesto
  • Fresh English Peas
  • Butter or Avocado Oil
  • Sea Salt and Black Pepper
  • Pine Nuts
  • Organic Sourdough Bread
White Bean Hummus
  • 16 oz. White beans
  • 1/4 cup tahini
  • Juice of 1 - 2 lemons
  • 3/4 tsp salt
  • 3 garlic cloves
  • 2-3 tbs oil
  • Fresh Chives
Arugula Pesto
  • 1 Bunch of Arugula
  • 1 Tbsp. Olive Oil
  • Juice of 1/2 a Lemon
  • (optional) 1 Tbsp. Nutritional Yeast or Parmesan Cheese
  • Salt & Pepper to taste

Instructions

White Bean Hummus
  1. Blend all ingredients in a food processor except the fresh dill. Add lemon juice and olive oil by taste.
  2. Top off with a little olive oil, fresh dill or chives, or any fresh herb you have on hand. You can also top it off with toasted pine nuts.
Arugula Pesto
  1. Pulse ingredients in a food processor.
The Toast
  1. Remove fresh english peas from their pods. Heat butter or avocado oil in a pan, and add the english peas. Sauté for about 5 minutes. Add some salt and pepper while cooking. You can also add a little bit of garlic, shallot, or spring onion. Set aside.
  2. While the peas are cooking toast slices of sourdough bread.
  3. Spread white bean hummus on each slice of bread.
  4. Then spread basil pesto on the top center.
  5. Add the warm, but not hot english peas over the top.
  6. Top with toasted pine nuts and freshly chopped chives, spring onions, or parsley.
