Celery Salad Recipe W/ Red Walnut, Apple Dressing

Celery Salad w/ Red Walnut Dressing
Apples and walnuts are used in many salads and go well with celery. My preference is to blend them into a dressing.
Ingredients
- Celery
- 1 Apple
- 1 Lemon
- 1/2 Cup Avocado Oil
- 1/2 Cup Walnuts
- 1/8 Tsp. Cayenne Pepper
- 1/4 Cup Parsley (plus)
- Sea Salt
Instructions
- Cut the top and the bottom of the celery. I used about 1/2 of the stalks. You can use all of it if you want to.
- With a mandoline and using two hands, carefully cut long thin slices of each stalk. It's a little tricky to do, so I set aside the last 1/4 of it so I don't cut my fingers.
- Place the shave long pieces in a bowl and pour filtered water to cover the top. Put the bowl in the refrigerator until the slices curl up.
- In a high speed blender, blend slices of an apple, oil, walnuts, cayenne pepper, and lemon juice.
- Once it's very smooth, add fresh parsley and blend it on low speed for a few seconds so that it's chopped up.
- Pour the dressing on the celery. You might only need half of it, and save the rest for later.
- Top with fresh parsley, a sprinkle of sea salt, and chopped walnuts. I used red walnuts from Ferrari Farms.
Notes
You can save time and do this the less fancy way by just slicing the celery in bits, the usual way.
Another option for the dressing is to replace apple with the equivalent of jujubes.
Don't us the pit of the jujubes and don't use the core of the apple.
