Spinach & Peas w/ Brown Rice Millet Pasta

Spinach & Peas w/ Brown Rice Millet Pasta

A gluten free pasta with nutritious plant protein.

Ingredients

  • 1 Bunch Spinach
  • 1/3 Cup Pumpkin Seeds or Pistachios
  • 3 tbsp Nutritional Yeast
  • ¼ Olive Oil
  • 1 Cup Packed Parsley
  • 1 Lemon
  • Fresh Peas
  • One Package Brown Rice Millet Pasta
  • Sea Salt, Black Pepper, & Chili Flakes

Instructions

  1. Blend the spinach, lemon juice, seeds or nuts, parsley, nutritional yeast, and olive oil in a high speed blender until smooth.
  2. Cook the pasta and drain.
  3. In a small sauce pan heat up some avocado oil and cook fresh peas for 5 minutes with a lid on the pan.
  4. Pour the sauce raw on top of the spinach and add the peas.
  5. Sprinkle with spices and flavors.
