Shallot Dressing w/ Mixed Citrus

This salad dressing uses a mix of incredible flavors, that will make your tongue tingle when you enjoy your salad.

Ingredients

  • 3/4 Cup Olive Oil
  • Juice of 2 Meyer Lemons
  • Juice of 2 Makrut Limes
  • Juice of 3 Key Limes
  • 1 Tbs. Dijon Mustard
  • 1 Tbs. Rice Vinegar
  • 2-3 Tbs. Chopped Shallots
  • 3/4 Tsp. Sea Salt
  • Black Pepper to Taste
  • Rind of Etrog (You can use any rind you want or use a mix of all three citrus rinds. Etrogs are a rare find that are used just for their rind. It’s a nice settle flavor.)

Instructions

  1. Finely chop your shallots.
  2. Squeeze the citrus juice by hand. Use as much rind as you feel comfortable with. You can see how much I used in the picture above.
  3. Mix all the ingredients in a bowl and gently pour it into a bottle.
  4. Shake it well and enjoy!
