Garbanzo and Greens Stew Recipe

Here’s an easy one! It’s lasted me three days, and I’ll take it with me in a ball jar for a road trip, so that I can keep something healthy and filling on the way.

This week we have jimmy nardello peppers (colors will vary), cherry tomatoes, and lacinato kale. I’ve seen this recipe done without greens and I can’t imagine it. Everything is better with greens.

Garbanzo Stew w/ Greens

Garbanzo Stew w/ Greens

A comforting, tasty, and easy dish, that will satisfy having some protein and healthy greens.

Ingredients

  • 13 oz. Cooked Garbanzo Beans
  • 1 Onion (Chopped)
  • 1 Can Coconut Milk
  • 1 Cup Water or Broth
  • 3 or 4 Jimmy Nardello Peppers
  • 1/2 to 1 Bunch of Fresh Parsley
  • 3 Cloves of Garlic
  • About 8 Oil Packed Sun Dried Tomatoes
  • 1/4 to 1/2 a Basket of Cherry Tomatoes
  • 1 Tbsp. Chili Crunch Oil (or 1 Tsp to 1/2 Tbsp. Chili Flakes)
  • Thyme

Instructions

  1. Sauté chopped onions and garlic with avocado oil, in a large saucepan with a lid, until brown on the edges.
  2. Add chopped sun dried tomatoes, cherry tomatoes, and some thyme.
  3. Pour in the liquids.
  4. Simmer for about 10 minutes.
  5. Add chopped peppers, chili crisp or chili flakes, garbanzo beans, and simmer another 10 minutes.
  6. In the last 5 minutes of cooking, add a leafy green. Any type of kale, collards, or spigarello.
  7. Throw in chopped fresh parsley at the end.
