Red Beet Tomato Soup

An incredibly nutritious blend of ingredients with a bright and satisfying flavor.

Ingredients

  • 1 bunch of beets
  • 1 bskt mountain magic tomatoes
  • 1 bell pepper
  • 1 jalapeño
  • 1 lemon
  • 1 orange
  • 1 lime
  • 1 ounce bloomsdale spinach
  • fresh dill

Instructions

  1. Boil the beets with the skin on. 10 minutes for small / medium size beets and 20 minutes for large.
  2. Let them cool and then slip the skin off.
  3. Blend the beets in a high-speed blender with most of the tomatoes. Leave a few for garnish. Then add juice half an orange, 1 lime, and 1 lemon, and 3 pinches of salt.
  4. Blend until smooth, then turn off the blender. Chop the top off of the peppers and remove the seeds, then cut into slices. Add the bell pepper, and jalapeño to the blender. Check the spice of the jalapeño first since the spiciness varies constantly. You may only need 2 slices or you might want the whole pepper.
  5. Blend all ingredients until smooth.
  6. (optional) Pour the soup in a pot and warm it up. Then add chopped spinach leaves to the soup to give it more nutrients. Cook the spinach down for a minute.
  7. Ladle the soup into bowls and add freshly chopped tomatoes, herbs, yogurt, and citrus slices.
  8. This soup can be enjoyed chilled or warm.
